About this coffee
Toraja Arabica Grade 1 is a semi-washed green coffee from the Sangbua-Kaduaja area of Gandangbatu Sillanan, in the highlands of Tanah Toraja, South Sulawesi. The trees grow at 1,400 to 1,800 m. Toraja has been a well-known specialty origin since the 1970s.
The soil is volcanic loam that drains well. Temperatures stay cool and cloud cover is common, so the cherry ripens slowly. The varieties are S795, Typica, Lini S and Jember. The beans are dark bluish-green, screen size 15 to 19, with 12 to 13% moisture. Production is limited.
Grade 1 is the Indonesian SNI grade: at most 11 defects per 300 g. The figures on this page come from the producer's fact sheet.
Tasting notes
Dark chocolate, earthy, tobacco, dark fruit, spice and caramel. The acidity is low to medium and smooth. The body is full and heavy, with a molasses and brown-sugar sweetness and a long, earthy-sweet aftertaste.
How it is processed
Toraja is semi-washed, known in Indonesia as giling basah. The cherry is pulped soon after picking, and the parchment is hulled while the bean is still moist, then dried. It is the traditional method in Sulawesi, and it gives Toraja its earthy, full-bodied cup.
Harvest runs from May to September and peaks from June to August.

Questions buyers ask
What does semi-washed (giling basah) mean for Toraja coffee?
Semi-washed means the parchment is hulled while the bean is still moist, before it is fully dried. Toraja Arabica is processed this way, which is the usual Indonesian method. It gives a fuller body and an earthier cup than a fully washed coffee.
Is Toraja Grade 1 an SCA grade?
No. Toraja Arabica Grade 1 is graded under the Indonesian SNI standard: at most 11 defects per 300 g. The SCA counts defects per 350 g, so the two numbers can't be compared directly.
What does Toraja Arabica taste like?
Toraja Arabica tastes of dark chocolate and earth first, then tobacco, dark fruit, spice and caramel. The acidity is low to medium and smooth, the body is full, and the aftertaste is long and earthy-sweet.
When is Toraja coffee harvested?
Toraja coffee is harvested from May to September, with the peak from June to August.
